Baked Norwegian salmon with broccolini and almonds

  • Preheat oven to 400°F.
  • Cut salmon into serving portions.
  • Trim asparagus ends, cut broccolini and asparagus into even pieces. Slice lemon.
  • Mix the olive oil, thyme, oregano and vegetables in a bowl, and transfer the mixture to an ovenproof dish.
  • Drizzle a couple of tablespoons of water over the vegetables and place the salmon pieces on top.
  • Sprinkle flaked almonds, salt and pepper over the salmon, and cover the dish with aluminum foil.
  • Bake for 20-25 minutes. Check if salmon  is done by gently pressing; if it flakes, it's ready.
