- Preheat the oven to 350F and lay a piece of parchment paper on a baking sheet.
- Place the salmon fillets, skin-side down, on the baking sheet. Pat dry with paper towels to remove excess moisture, then sprinkle each piece evenly with salt.
- Mix the mayo, mustard, breadcrumbs, and parmesan cheese. Spread mixture evenly over each piece of salmon. Sprinkle lemon zest over each piece to finish.
- Place the salmon in the oven and bake for 25 minutes or until the crust is golden and the salmon is fully cooked.
- Serve with fresh lemon wedges on the side for added brightness.
