Easy Sheet Pan Norwegian Salmon & Veggie Bake

A balanced meal of salmon, baked sweet potato fries and roasted green beans comes together easily on one sheet pan.

  • Preheat your oven to 400°F. Place a piece of parchment paper on a baking sheet. 
  • Peel and slice the sweet potatoes into fries. Arrange the sweet potato fries on one side of the baking sheet. Drizzle with 1 1/2 tablespoons olive oil, sprinkle with cumin, sweet paprika, and sea salt. Toss to coat. 
  • Place the baking sheet in the oven and roast the sweet potatoes for 15-20 minutes. 
  • While the sweet potatoes are roasting, season the salmon filets with salt, cumin, and paprika, and drizzle with 1 tablespoon olive oil. Also, trim the green beans. 
  • After 15-20 minutes, remove the baking sheet from the oven and lower the temperature to 350°F. 
  • Add the seasoned salmon filets to the center of the baking sheet. On the remaining space, spread the green beans, drizzle with the remaining olive oil, and season with salt and pepper. 
  • Return the baking sheet to the oven and bake for an additional 18 minutes, or until the salmon is cooked through and flakes easily with a fork, the sweet potatoes are tender, and the green beans are crisp-tender. 
  • Remove from the oven and let cool slightly. Serve the salmon filets with the roasted sweet potatoes and green beans on the side.
