Marry Me Norwegian Salmon with Spinach & Orzo in a Cream Sauce

Air-fried salmon over a delicate bed of orzo topped with a rich cream sauce, with mushrooms and sundried tomatoes.

Preparation

  • Preheat air fryer to 400F. Season salmon portions with salt and pepper. Spray bottom of air fryer tray with olive oil spray. Place salmon inside and air fry for 8-10 minutes, or until fully cooked.  
  • Bring a pot of well salted water to boil. Cook orzo according to package directions. Drain, mix with 1 tablespoon butter if using, and set aside. 
  • In a medium saucepan, heat olive oil over medium heat. Add in mushrooms and saute 2-3 minutes. Remove from saucepan and set aside.  
  • Reduce heat to medium-low. Add in butter and let melt, then sprinkle in the flour to make a roux. Stir immediately, so the flour absorbs the fat and forms a smooth paste. About 1-2 minutes later, add the broth, heavy cream, and parmesan and bring heat back up to medium. Let simmer until sauce thickens.  
  • Add mushrooms back into the sauce. Add the spinach and stir in until wilted. Add julienned sundried tomatoes into the sauce. Let simmer slightly before removing from heat.  
  • Plate salmon on top of orzo and dress with sauce. Serve hot.
