- Preheat the oven to 248 °F.
- Cut the Steelhead Trout fillet into suitable portions and place on a baking tray covered with baking paper.
- Brush the fish with sunflower oil, sprinkle with salt and pepper and bake in the oven for 10-15 minutes.
- Cook the potatoes with the skin on.
- Cut the potatoes in thick slices and finely chop the onion.
- Fry the potato slices and onion in olive oil quickly and sprinkle with salt and pepper.
- Finely chop the shallots. Peel and dice the apple.
- Add shallot, cider vinegar and apple juice to a sauce pan and reduce.
- Gradually add butter.
- Add the apple dices and cook for 5 minutes.
- Serve the Steelhead Trout with the potatoes and sauce on the side.
