Steelhead Trout and Apple Sauce

  • Preheat the oven to 248 °F.
  • Cut the Steelhead Trout fillet into suitable portions and place on a baking tray covered with baking paper.
  • Brush the fish with sunflower oil, sprinkle with salt and pepper and bake in the oven for 10-15 minutes.
  • Cook the potatoes with the skin on.
  • Cut the potatoes in thick slices and finely chop the onion.
  • Fry the potato slices and onion in olive oil quickly and sprinkle with salt and pepper.
  • Finely chop the shallots. Peel and dice the apple.
  • Add shallot, cider vinegar and apple juice to a sauce pan and reduce.
  • Gradually add butter.
  • Add the apple dices and cook for 5 minutes.
  • Serve the Steelhead Trout with the potatoes and sauce on the side.
