Preparation
- Season the salmon with paprika, salt, pepper, honey and the juice of ½ lemon. Let it rest to absorb the flavors.
- Preheat the oven to 350F. Place the salmon on a baking sheet and bake for 30 minutes.
- Mince the garlic and dice the red onion, tomato, and peppers. In a pan, saute the tomato, onion, garlic, and peppers with salt and pepper. Add the coconut milk and cook until thickened. Remove from heat and rest.
- Blend and strain the coconut milk sauce and then return to pan to simmer for 3 more minutes.
- Prepare the couscous: In a pot, sauté garlic with olive oil. Then add water and salt and cook couscous according to package directions. Add butter and Italian herbs to taste.
- Serve couscous with salmon and sauce.
