Honey Citrus Salmon

  • Preheat your oven to 350°F.
  • Use a mix of citrus fruit to your liking - lemon, blood orange, cara cara or navel orange. Use half for slices and half for juice.
  • Arrange ½ of the sliced citrus on the prepared baking sheet or dish. Place the salmon filets on top of the citrus. Season with salt and pepper. Cover salmon with additional slices of citrus for each filet. 
  • In a small bowl, mix together the honey, citrus juice, melted butter, chopped parsley, grated garlic, and stone ground mustard.
  • Drizzle the honey citrus mixture over the salmon filets, making sure they are evenly coated. 
  • Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Serve with additional slices of citrus on top of a bed of fresh steamed vegetables and rice.
